I've been asked by a few people today what on earth it's meant to be used for, so let me share with you one of my favourite quick and simple recipes. There's something satisfying and comforting about Mac & Cauli Cheese. And with zero dairy + lots of turmeric, your skin will appreciate it too.
Breakfast is the most difficult meal of the day to incorporate veggies! This is why I usually start my day with a green juice - packed with lots of leafy greens. But at a weekend it's nice to have something a little more indulgent. These sweet potato hash browns are perfect. Golden and crispy on the outside, soft on the inside and there's extra veg sneaked in there too!
Breakfast muffins are a really great option for a healthy, filling, morning grab-and-go food. I like to bake mine on a Sunday and store in a tin for the week ahead. My favourite savoury flavour is vegan cheese and spinach ... but you could add carrots, peas, grated courgette (zucchini) whatever works for you.
Beetroot is so good for our skin. Drinking a glass of juice purifies blood and eliminates toxins, leaving us with a healthy and glowing complexion. Beetroot tastes pretty earthy and that's why it works so well with lighter, fresh flavours such as apple, ginger and lemon.
I had serious sweet cravings today. There's something about snowy days that make me want to curl up by the fire eating all of the food!! The good thing about these muffins is that they're so big and fluffy and filling ... you genuinely don't feel as though you need to eat all six to be full :)
What is a Sunday dinner without gravy? Dry and miserable is what it is! Most shop-bought gravies contain gluten, potato starch, sugar and E numbers. This is a super simple gravy recipe and much more delicious than the shop bought granules.
