Winter Porridge with Caramel Apple Slices

INGREDIENTS (serves 2)

100g porridge

500ml nut milk + 200ml water

3 small apples

2 tbsp maple syrup

1 tbsp coconut oil

1 tsp cinnamon 

To Decorate

Flaked almonds

Desiccated coconut 

Pecans

HERE'S HOW

Add the porridge to a saucepan, pour in the milk and gently warm. Add a pinch of salt and cinnamon

Meanwhile heat the coconut oil in a pan. Carefully lay the thinly sliced apples into the pan, drizzle in maple syrup, add a pinch of salt and a sprinkling of cinnamon. The oil will bubble so take care. Turnover the apple slices after 1 minute or so

Remove the apple from the pan. Carefully pour the hot syrup onto a sheet of baking paper. This makes great sticky toffee crisps but be really really careful with the hot oil / sugary mix - allow to cool

Pour the porridge into two bowls. Add the apple slices and decorate. Sprinkle with cinnamon and add a toffee crisp piece to each bowl
