Vegan Coconut Whipped Cream

As autumn creeps in I love warm spiced desserts. Poached pears and fruit crumbles are my absolute favourites. These desserts always taste so much better served with a generous dollop of fresh cream! Whipping up this simple vegan version is super simple and it can be stored in the fridge for a couple of days if you can resist it that long!

INGREDIENTS

Cream off the top of a tin of coconut milk - I use Aldi's full fat in the UK as it separates nicely. If yours doesn't, pop it in the fridge to encourage the milk and water to split

2 tsp coconut sugar

Pinch of cinnamon

HERE'S HOW

Use an electric whisk to whip up the coconut cream and sugar

Sprinkle with ground cinnamon and serve with a big spoon to enable generous servings
