Vegan Chocolate Popcorn Bites

Oh my days this is too good! Freshly popped corn drizzled in maple syrup with a little pink salt, then drenched in the richest dark chocolate. YES PLEASE. I've made these in a very adult way :) by sticking everything in a big block, but you could make it with little ones by sticking the popcorn into cup cake trays (like rice krispy cakes). 

Either way, it's awesome! Sweet and sticky and delicious. Completely vegan with no dairy or refined sugar. And so much fun to make! 

INGREDIENTS

1 tsp coconut oil

200g popping corn

1 tbsp maple syrup

Pinch or two of pink salt

For the chocolate

3 tbsp coconut oil

3 tbsp cacao powder

1 tbsp maple syrup

HERE'S HOW

Warm the coconut oil in a pan, add the corn, put the lid on and POP! (this takes 5 minutes or so ... just be patient)

Tip the popped corn into a bowl and stir in the maple syrup and salt

Add the remaining coconut oil, cacao and maple syrup to the pan, gently warm, then pour over the popcorn and stir well

Spoon the chocolate covered popcorn onto a baking sheet, layer a baking sheet on top and press down firmly to stick the popcorn together

Allow to cool in the fridge for an hour, then slice into bite size squares
