Vegan Bangers and Butter Bean Mash

I love a bit of comfort food on a Sunday evening. This delicious vegan sausage and butter bean mash is warm, filling and ever so tasty! Sometimes I get fed up with using sweet potato and regular white potatoes aren't an option as they're a nightshade, so butter bean mash makes a lovely alternative. 

INGREDIENTS (per person)

3 vegan sausages (Sainsburys do this brand)

Handful of fresh Kale

1 tin butter beans

1 scoop coconut cream (the cream off the top of the tinned coconut)

2 tbsp coconut milk (the watery bit in the can)

1 tsp wholegrain mustard

1 tsp horseradish

Pinch of salt

Add the drained butter beans to a food processor. Add the horseradish, mustard, coconut cream, milk and salt. Blend until smooth

Add the butter bean mash to a pan and gently warm through

Warm a tsp of coconut oil in a frying pan. Add the sausages and kale. Sprinkle a little salt and lemon juice over the kale and stir well over a low heat

Serve with lashings of hot gravy
