Right, total honesty from the start here ... there are some recipes I create that I would say eat, eat and eat again (think green smoothie bowls, ramen soups, steamed greens)!! Others should maybe come with a 'moderation' warning ;) Not because they're not good for our skin - these are meat free, dairy free, gluten free and don't contain any refined sugar - but just, although all those things have been taken out, it doesn't mean we should be stacking these up for breakfast every single day!
That said, it's the weekend ... and who doesn't love a little Sunday morning pile of pancakes? Buy the ingredients tomorrow in your 'big shop' and share your indulgent Sunday feasts with me on Instagram :)
INGREDIENTS (enough for 2 servings)
Vegan Bacon - all you need to know is right here
1 mug gluten free flour
1 mug almond milk
1 tbsp light olive oil
1 tbsp baking powder
Pinch of salt
1 or 2 tbsp coconut oil
Maple syrup to drizzle
Blitz the pancake batter ingredients together in your blender. Including the flour, milk, olive oil, baking powder and salt
Warm a tablespoon of coconut oil in a pan, gently pour in a little bit of batter until it forms a circle, warm gently and once cooked on the underside, flip over. Repeat.
One you've stacked up your pancakes, re-stack them onto a clean plate, layering 'bacon' between each one
Finally drizzle in maple syrup
