Breakfast muffins are a really great option for a healthy, filling, morning grab-and-go food. I like to bake mine on a Sunday and store in a tin for the week ahead. My favourite savoury flavour is vegan cheese and spinach ... but you could add carrots, peas, grated courgette (zucchini) whatever works for you.
