Soft & Chewy Vegan Oat Cookies

I really, really, really fancied a sweet snack tonight! And with nothing in the house, time to whip up a batch of chewy, gooey oat cookies. 

I love these cookies slightly underdone so that they're soft and chewy in the centre. 


200g oats (gluten free if gluten is a problem for you)

100g plain flour (I used Orgran Gluten Free)

75ml maple syrup

100ml coconut oil (warmed to liquid)

1 tsp baking powder

1/2 tsp mixed sweet spices (cloves / cinnamon etc)

1/2 tsp ground ginger

Pinch of salt 


Preheat the oven to 180C

Add everything to a mixing bowl, stir with a spoon to combine

Use your hands to roll into 9 or 12 equal size balls

Squash each ball down slightly into a disc shape

Place on a baking sheet and oven bake for 10 mins at 180C 

Allow to cool on a wire tray
