Skin Super Food Stir Fry

This is such a quick, simple, throw together meal! It contains tons of skin boosting ingredients and it takes less than 10 minutes to throw together. 

INGREDIENTS

50g Rice Noodles

2 tbsp coconut oil 

4 chestnut mushrooms

75g kale

2 carrots (grated)

50g beansprouts

Half a head of broccoli

6 baby corn

30g cashews

2 tsp tamari sauce (gluten free soy)

1 tsp maple syrup

Juice of half a lime

1 avocado 

Handful of mixed seeds (I've used pumpkin, flax and sunflower seeds)

HERE'S HOW

Boil a pan of water. Add the noodles and simmer (approx 5 mins)

Add the coconut oil to a wok or pan and warm until it's liquid

Add all the other ingredients except the avocado and seeds and stir well 

Add the noodles and stir for another minute or so ... adding more tamari and lime if needed

Serve with half an avocado and a sprinkling of seeds
