Scrambled Tofu Brunch Baguette

If you're looking for a delicious, filling breakfast you'll love this hearty, vegan brunch baguette. It's super easy to make and full of delicious skin purifying ingredients. 

Shiitake mushrooms and turmeric both have both been shown to have immune regulating properties. They support the body to get the immune system back in-line which makes them particularly beneficial for autoimmune conditions such as psoriasis. 

INGREDIENTS (serves 2)

200g tofu (I like this brand)

1 avocado 

1 tsp coconut oil

10 shiitake mushrooms

Half tsp of turmeric

Pinch or two of pink salt

Grind of pepper

2 gluten free baguettes

HERE'S HOW

Warm the baguettes in the oven

Thinly slice an avocado and lie the slices along the warmed baguettes

Slice the tofu 

Warm a teaspoon of oil in a frying pan. Add the tofu and mushrooms

Use the back of a fork to mash the tofu. Add the turmeric, salt and pepper

Split the mushrooms and scrambled tofu equally between the baguettes

Grind pepper over the baguettes and serve warm
