Mac n Chease Vegan

I'm not sure what happened this week. It's late July and we've been having a seemingly endless summer ... then 3 days of rain in the north of England! My tummy immediately flipped from craving fruit and salads to wanting warming comfort food. 

This is one of my favourite dishes. Turmeric is super beneficial for auto immune conditions and I love how warming and delicious it is. So easy to throw together and the whole family will love it! 

Plus it's great for eczema as it's completely dairy free!


150g cashews

3 heaped tbsp nutritional yeast

2 tsp wholegrain mustard

Salt to season

Juice of half a lemon

1 cauliflower

2 tbsp olive oil

1 tsp ground turmeric

100g gluten free macaroni


Add the cashews to a nutribullet cup, cover in boiling water (the water should come about 1cm above the cashews) for 1 hour

Don't drain the cashews, simply add the nutritional yeast, mustard, salt and lemon and blitz in the nutribullet until smooth

Roast the cauliflower in the oven (170C) drizzled in olive oil and sprinkled in turmeric and salt. After 20 mins remove from the oven and stir everything well, then return to the oven

Meanwhile boil a pan of water, add the macaroni and boil for 5 to 8 mins until it's soft. Drain and add to the cauli. Stir well. Stir in the creamy sauce and return to the oven for 10 minutes.
