I'm crediting my lovely friend Kyle's mother for this recipe!! Apparently grilled grapefruit was a very sixties thing ... well it ought to make a swift return! So much tastier and less sherbety-toe-curling than eating it raw, plus it's easier to peel from it's skin. The perfect breakfast fruit.

INGREDIENTS (per serving)
1 pink grapefruit
Pinch of ground cardamon
Pinch of ginger
Pinch of cloves
Drizzle of maple syrup
3 tbsp coconut yoghurt
Slice the grapefruit in half - note .. you have to slice it horizontally to ensure you get the segments the correct way up! So, don't slice down the centre vertically like you would an apple, slice it straight across through the middle
Use a knife to carefully dig in around the edge of each half to loosen the grapefruit flesh from the skin (this helps when you're eating it!)
Drizzle both halves in maple syrup and sprinkle the spices on top
Place under a hot grill (flesh side up) and grill for 5 to 10 minutes
If you'd like more of a browned look on top, I used a hot pan and placed the grapefruit flesh down to create that lovely caramel look. It only needs a minute or so
Serve warm with coconut yoghurt
