Easy Vegan Chocolate Recipe

This has to be by far the simplest way to throw together some chocolate! I love to make it at the start of the week ... kidding myself that those chunks will sit in the freezer and last me until the weekend ... they don't ;o) 

The great thing about making chocolate this way is that you avoid dairy and refined sugar - often found in shop bought chocolate bars. I've made a fruit and nut version but you can also experiment with things like sea salt and peppermint oil to create new flavours! 


4 tablespoons coconut oil

4 tablespoons cacao powder

2 tablespoons maple syrup 

4 tablespoons mixed nuts and seeds ( I've used Wyldsson promix - use promo code MYGOODNESS to get 10% off at their checkout ) 


Gently melt the coconut oil in a pan, stir in the maple syrup and cacao until smooth

Finally stir in the nuts and seeds or optional extras such as peppermint oil if you prefer

Pour into a silicone tray - or a baking tray lined with greaseproof paper

Pop in the freezer for at least an hour ... I know! Be patient :) 

Remove from the freezer, break into chunks 

Keep stored frozen
