Cranberry and Hazelnut Granola

The great thing about granola is that it only requires a few simple base ingredients ... then you can add whichever dried fruits, nuts and seeds you have handy. I still had a packet of dried cranberries left over from Christmas so I've gone for cranberry and hazelnut with cloves and cinnamon - the house smells amazing!



3 tbsp coconut oil 

3 tbsp maple syrup

Pinch of salt

500g oats 

Handful sunflower seeds

Handful flax seeds

Handful coconut flakes

100g dried cranberries

Handful of hazelnuts

Sprinkle of ground cloves

Sprinkle of cinnamon


Melt the coconut oil in a pan, turn off the heat and stir in the maple syrup

Stir the oats, sunflower seeds and flaxseeds into the oil, combining well

Spread the mixture onto a large baking sheet

Bake in the oven for 15 mins at 150C

Remove and stir in the cranberries, hazelnuts and coconut (you don't want to add these too soon as they'll burn) Add the spices and season with a pinch of salt

Bake for another 10 - 15 mins until golden. Allow to cool. Store in a jar
