If you struggle with the taste of celery in a juice, you might find it easier to boil up as a soup. This is such a brilliantly easy recipe for the cooler months. Make up a big batch and freeze it if you need to. I keep mine in the fridge throughout the working week.
INGREDIENTS (makes 4 bowls)
1 bunch of celery
2 potatoes (I used white sweet potatoes)
1 clove of garlic
1 handful of fresh parsley
4 tbsp vegan stock (I use this one)
1.5 litres of water
Peel and chop all the vegetables and add everything to a saucepan along with a clove of garlic
Cover with 1.5 litres of boiling stock and simmer gently for 30 mins until the potato has softened
Add the fresh parsley and allow to cool
Blend everything together, reheat to serve and add a blob of cashew sour cream on top
