Baked Ginger Figs with Whipped Coconut

Figs are one of my absolute favourite foods! Fig season is always very short, so the moment these beauties appear into shops I go into fig recipe overdrive. This is such a delicious, naturally sweet and gently spiced autumn recipe. The colours and flavours perfectly reflect the season.


4 fresh figs

3 pears & a small chunk ginger juiced

5 star anise

Pinch of ground cardamon

1 tsp coconut sugar

1/2 tsp cinnamon


Carefully quarter the figs from the top but don't slice right through them

Sit them into a ceramic dish and pour over the juiced pear and ginger juice. Add the star anise to the dish, along with the cinnamon and sugar

Oven bake for 15 - 20 mins at 160C 

Serve warm with a generous serving of coconut cream whip
