Autumn Persimmon Porridge

Have you tried a persimmon fruit yet?! For ages I called them permission fruit :) genuinely not realising my mistake!! Persimmon is a Latin word - it means “food of the gods.” They've become a bit of an autumn thing in UK supermarkets these past few years and are relatively inexpensive.

55% of our daily recommended dose of Vitamin A can be found in a persimmon. That's a whole heap of skin boosting benefits. They're a deliciously sweet, caramel flavour and even sweeter warmed gently in a pan with coconut oil and a drop of maple syrup.

INGREDIENTS (2 bowls)

100g porridge oats

500ml coconut milk (or almond) 200ml water

1 persimmon fruit sliced

1 peach sliced

Handful of pecans

Sprinkling of ground all spice

1 tsp maple syrup

2 tsp coconut oil

Pinch of salt

HERE'S HOW

Add the oats to a pan, stir in the milk and water and gently warm. Add a pinch of salt and drop of maple syrup. Warm for about 5 mins on a low heat

Meanwhile warm the coconut oil in a pan, add slices of persimmon and peach, a teaspoon of maple syrup and sprinkle of ground all spice. Warm and allow to bubble for a minute, turning the fruit over to brown evenly. Add the pecans and turn off the heat

Serve in a bowl, sprinkled with flaked almonds and a little more ground all spice
